Ingredients

2 cups Cheddar Bay Biscuit mix

1 cup shrimp, peeled and deveined

1 cup lump crab meat

1 cup bay scallops

4 tablespoons butter

1/4 cup all-purpose flour

1/2 cup onion, diced

1/2 cup celery, diced

2 cloves garlic, minced

1 1/2 cups seafood stock or chicken broth

1 cup heavy cream

1 cup frozen peas and carrots

1/2 cup shredded cheddar cheese

1 teaspoon Old Bay seasoning


Instructions

1. Melt butter in a skillet and cook diced onions and celery until softened. Add garlic and cook for 1 minute.

2. Sprinkle in flour and stir to form a roux. Let it cook for 1 minute to remove raw flour taste.

3. Slowly whisk in seafood stock and heavy cream. Simmer until thickened into a creamy sauce.

4. Fold in shrimp, crab, scallops, peas, and carrots. Cook until shrimp start to turn pink.

5. Prepare biscuit dough per package instructions and stir in shredded cheddar.

6. Pour seafood filling into a baking dish and top with spoonfuls of biscuit dough.

7. Bake at 375°F until biscuits are golden and filling is bubbly, about 20–25 minutes.

8. Let cool slightly before serving.

Notes

Use thawed seafood if using frozen to avoid excess water in the filling.

Add a dash of hot sauce to the filling for a little kick.

Leftovers are great the next day; reheat in oven to keep biscuits crisp.
