Description

Ingredients

3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

3 large eggs

1/2 cup granulated sugar

1/4 cup brown sugar

1 teaspoon vanilla extract

2 tablespoons vegetable oil

2 cups freshly grated carrots

1/4 cup powdered sugar (for dusting)

8 ounces cream cheese, softened

4 tablespoons unsalted butter, softened

3/4 cup powdered sugar (for frosting)


Instructions

1. Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.

2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. In another bowl, beat eggs, granulated sugar, brown sugar, vanilla, and vegetable oil until smooth.

4. Add the dry ingredients to the wet mixture and stir until combined. Fold in grated carrots.

5. Pour the batter into the prepared pan, spread evenly, and bake at 350°F (175°C) for 12-15 minutes.

6. Remove the cake and immediately roll it up with the parchment from the short end. Let it cool completely.

7. Beat the cream cheese and butter until smooth, then add powdered sugar and vanilla until fluffy.

8. Carefully unroll the cake, remove parchment, and spread frosting evenly over the surface.

9. Re-roll the cake tightly, wrap in plastic, and chill for at least 1 hour before slicing.

10. Dust with powdered sugar just before serving.

Notes

Always use freshly grated carrots for best texture.

Don’t skip rolling the cake while it’s warm to prevent cracks.

Letting it chill helps the frosting set and the flavors meld.
