Ingredients
12 oz pasta
3 large leeks
8 oz mushrooms
1 cup Gruyere cheese, grated
3 cloves garlic, minced
2 tbsp olive oil
2 tbsp butter
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1 tsp fresh thyme (optional)
Instructions
1. Trim, slice, and clean the leeks. Slice mushrooms and mince garlic. Grate the Gruyere cheese.
2. In a large skillet, heat olive oil and butter over medium heat. Add leeks and a pinch of salt. Cook for 15 minutes, stirring occasionally, until caramelized.
3. Add mushrooms to the pan and cook until browned. Stir in garlic and cook until fragrant.
4. Boil pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.
5. Add heavy cream to the leek mixture. Simmer, then stir in Gruyere cheese until melted. Season with salt, pepper, and thyme.
6. Toss cooked pasta into the sauce. Add reserved pasta water as needed for consistency. Serve warm with extra cheese or thyme.
Notes
Use baby bella or cremini mushrooms for the best flavor.
Let the leeks fully caramelize for a richer taste.
Gruyere can be swapped for Fontina or Swiss if needed.
