Ingredients
1 tablespoon olive oil
12 ounces smoked sausage, sliced
1 bell pepper, diced
2 celery stalks, diced
1 small onion, chopped
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1 cup long grain white rice
2 1/4 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
2 green onions, chopped (optional)
Instructions
1. Slice the smoked sausage into rounds and sear in olive oil over medium-high heat until browned and crispy. Remove and set aside.
2. In the same pan, add bell pepper, celery, and onion. Sauté until softened, about 5 minutes. Add garlic and cook for 1 more minute.
3. Stir in Cajun seasoning and rice. Let the rice toast slightly for 2 minutes.
4. Pour in chicken broth, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes until the rice is tender and liquid is absorbed.
5. Add the cooked sausage back into the pan, stir well, and let sit for a few minutes before serving. Garnish with green onions if desired.
Notes
Use andouille sausage for traditional flavor or substitute with turkey sausage for a lighter option.
If rice starts sticking, add a splash of broth while reheating.
