Ingredients
2 chicken breasts
1 tablespoon Cajun seasoning
1 tablespoon olive oil
3 garlic cloves, minced
9 ounces refrigerated cheese tortellini
1 cup heavy cream
4 ounces cream cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Salt and pepper, to taste
2 tablespoons chopped fresh parsley
Instructions
1. Slice the chicken breasts into bite-sized pieces and season with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a large skillet over medium heat and cook the chicken until golden and fully cooked. Remove and set aside.
3. Cook the cheese tortellini in salted boiling water according to the package instructions. Drain and reserve some pasta water.
4. In the same skillet, sauté minced garlic in a bit more olive oil until fragrant.
5. Add heavy cream and bring it to a simmer. Stir in cream cheese, Parmesan, and mozzarella. Stir until the sauce is smooth and creamy.
6. Return the cooked chicken and tortellini to the skillet and gently mix to coat everything in the sauce. Add reserved pasta water if needed to loosen the sauce.
7. Garnish with chopped fresh parsley and serve hot.
