Ingredients

1.25 lb sirloin steak

2 tsp Cajun seasoning

1 tsp kosher salt

0.5 tsp black pepper

2 tbsp olive oil

4 tbsp unsalted butter

4 cloves garlic, minced

20 oz cheese tortellini

2 cups Alfredo sauce

0.25 cup grated Parmesan cheese

1 tbsp chopped parsley

0.25 cup reserved pasta water


Instructions

1. Pat steak dry and season on all sides with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a large skillet over medium-high heat until shimmering.

3. Sear steak 3 to 4 minutes per side to desired doneness, then transfer to a plate to rest.

4. Lower heat to medium, add butter to the same skillet, and stir in minced garlic until fragrant, about 30 seconds.

5. Pour in Alfredo sauce and whisk until smooth and gently bubbling.

6. Boil tortellini in salted water according to package directions, reserving 0.25 cup pasta water. Drain.

7. Toss tortellini into the Alfredo sauce, adding splashes of reserved pasta water to loosen to a silky coating.

8. Slice the rested steak against the grain into strips.

9. Plate tortellini, top with steak, and spoon any extra garlic butter from the pan over the steak.
