Ingredients
400g linguine
350g sirloin steak (or ribeye/flank), sliced thin
2 tablespoons Cajun seasoning
3 tablespoons butter
4 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1 tablespoon olive oil
1 tablespoon lemon juice
Salt and black pepper to taste
Instructions
1. Cook the pasta: Bring a large pot of salted water to a boil and cook the linguine until al dente. Reserve a cup of pasta water and drain.
2. Sear the beef: Season beef strips with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the beef for about 2–3 minutes per side. Remove and set aside.
3. Make the garlic butter sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant. Stir in heavy cream, a splash of pasta water, and Parmesan. Simmer until thickened.
4. Combine everything: Toss cooked linguine into the sauce. Return beef to the skillet and warm through. Add lemon juice and parsley.
5. Serve: Plate with extra Parmesan and parsley. Serve warm.
Notes
Use good-quality steak for the juiciest result.
Adjust Cajun spice level to suit your taste.
Add more pasta water if the sauce is too thick.
