Ingredients

2 chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons butter

3 garlic cloves, minced

8 ounces twisted pasta (fusilli or rotini)

1 cup heavy cream

1/2 cup grated parmesan cheese

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Season chicken breasts with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium-high heat and sear the chicken on both sides until golden and fully cooked, about 6-7 minutes per side.

3. Remove chicken and set aside. In the meantime, cook the pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.

4. Lower the skillet heat to medium, add butter and minced garlic. Sauté for 1-2 minutes until fragrant.

5. Pour in heavy cream and bring to a gentle simmer. Stir in parmesan and pasta water, whisking to create a creamy sauce.

6. Add cooked pasta to the sauce, tossing to coat evenly and letting it thicken slightly.

7. Slice the seared chicken and place on top of the pasta.

8. Garnish with chopped parsley and extra parmesan if desired.

Notes

Twisted pasta like rotini holds onto sauce better, making each bite flavorful.

To make it extra creamy, add an additional tablespoon of parmesan before serving.
