Ingredients
8 oz spaghetti
2 boneless skinless chicken breasts
2 tsp Cajun seasoning
1 tbsp olive oil
3 cloves garlic, minced
2 tbsp butter
1 cup heavy cream
1 cup shredded mozzarella cheese
¼ cup grated parmesan cheese
¼ tsp salt
¼ tsp black pepper
Instructions
1. Season both sides of chicken breasts with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium heat and sear chicken for 5-6 minutes per side until cooked through. Remove and let rest.
3. Cook spaghetti in salted boiling water until al dente. Drain and reserve 1 cup pasta water.
4. In the same skillet, melt butter and sauté garlic until fragrant.
5. Pour in heavy cream, stir, and bring to a simmer.
6. Add mozzarella and parmesan, stir until melted and sauce is smooth. Season with salt and pepper.
7. Toss in cooked spaghetti to coat with sauce. Add reserved pasta water if needed.
8. Slice chicken and place on top of pasta or mix in. Serve hot.
Notes
Always let the chicken rest before slicing to keep it juicy.
Use freshly shredded cheese for better melting in the sauce.
Thin the sauce with reserved pasta water if it gets too thick.
