Ingredients

1 pound rotini pasta

1 pound boneless skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 cup Velveeta cheese, cubed

1 cup mozzarella cheese, shredded

1 cup heavy cream

1 cup chicken broth

0.5 teaspoon salt

0.25 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Add rotini and cook until al dente. Drain and set aside.

2. Dice chicken breasts into bite-sized pieces and season with Cajun seasoning, salt, and pepper.

3. In a large skillet over medium heat, add olive oil. Sear the seasoned chicken until golden and cooked through. Remove and set aside.

4. In the same skillet, sauté garlic until fragrant. Add chicken broth and heavy cream. Simmer gently.

5. Stir in Velveeta and mozzarella. Cook until the cheeses are melted and the sauce is smooth.

6. Return chicken and rotini to the skillet. Toss to coat evenly. Simmer 1 minute to heat through.

7. Garnish with parsley and serve hot.
