Ingredients
2 chicken breasts
1 1/2 tablespoons Cajun seasoning
2 tablespoons olive oil
3 cloves garlic, minced
3 tablespoons butter
1 1/2 cups heavy cream
1 cup Parmesan cheese, grated
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
12 ounces rotini or fusilli pasta
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Cut chicken breasts into bite-sized pieces. Toss with Cajun seasoning, olive oil, salt, and pepper.
2. Heat a skillet over medium-high heat. Saute chicken until golden and cooked through. Remove and set aside.
3. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water; drain.
4. In the same skillet, melt butter over medium heat. Add garlic and saute until fragrant.
5. Pour in heavy cream; simmer gently, then stir in Parmesan until smooth.
6. Add parsley and basil; use pasta water as needed to loosen the sauce.
7. Toss pasta in the sauce; return chicken and stir to coat evenly.
8. Serve hot with extra herbs and Parmesan if desired.
Notes
Serves 4 generous portions.
Adjust Cajun seasoning to taste for milder or spicier results.
When reheating, add a splash of milk or cream to bring back the silky texture.
