Ingredients

1 lb ground beef

1 medium head of cabbage, chopped

4 cups beef broth

1 large onion, diced

3 carrots, sliced

3 celery stalks, chopped

1 can (14.5 oz) diced tomatoes

2 cloves garlic, minced

1 tsp paprika

1 tsp dried thyme

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions

  1. Cook the Ground Beef: Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess grease and set aside.
  2. Sauté the Vegetables: In the same pot, add onions, carrots, and celery. Cook for about 5 minutes until softened. Add minced garlic and cook for another minute.
  3. Combine and Simmer: Return the cooked beef to the pot. Add cabbage, diced tomatoes, beef broth, paprika, thyme, salt, and pepper. Stir well.
  4. Cook the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes until the cabbage is tender.
  5. Serve and Enjoy: Ladle into bowls, garnish with fresh parsley, and serve hot with bread or crackers.
