Ingredients
1 lb boneless chicken breast or thighs
3 garlic cloves, minced
1/3 cup buffalo sauce
2 tbsp butter
12 oz twisted pasta (rotini or cavatappi)
1 cup heavy cream
1/2 cup grated parmesan cheese
1 tbsp Cajun seasoning
1/3 cup ranch dressing
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Cut chicken into bite-sized chunks. Heat olive oil in a skillet over medium-high heat and season the chicken with salt, pepper, and Cajun seasoning.
2. Sear the chicken until golden and cooked through, then remove from skillet and set aside.
3. In the same skillet, melt butter and add minced garlic. Sauté until fragrant, then add buffalo sauce and simmer for 1 minute.
4. Return chicken to skillet and coat evenly with buffalo garlic sauce. Reduce heat to low.
5. Meanwhile, cook pasta according to package instructions. Reserve a bit of pasta water and drain the rest.
6. In a separate pan, melt butter with Cajun seasoning. Add heavy cream and bring to a gentle simmer.
7. Stir in parmesan cheese until melted and smooth. Thin with pasta water if needed.
8. Mix in ranch dressing to the Alfredo sauce until fully blended.
9. Toss cooked pasta into the ranch Cajun Alfredo sauce until coated.
10. Plate the pasta and top with buffalo garlic chicken bites. Garnish with parsley or more parmesan if desired.
Notes
Let the garlic simmer slowly to bring out its flavor.
Don’t overcook the pasta; al dente holds the sauce better.
Use freshly grated parmesan for the creamiest Alfredo texture.
