Ingredients
1 lb ground beef
1 small green cabbage, chopped
1 medium onion, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup white rice, uncooked
2 cups beef broth
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 tbsp olive oil
Instructions
1. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
2. Stir in chopped onion and garlic, cooking until softened and fragrant.
3. In a baking dish, spread half of the chopped cabbage. Layer the beef mixture on top.
4. Sprinkle uncooked white rice over the beef. Then pour diced tomatoes, tomato sauce, and beef broth evenly over the top. Season with salt, pepper, and paprika.
5. Top with remaining cabbage. Cover tightly with foil and bake at 350°F for about 75 minutes, until rice is cooked and cabbage is tender. Let it rest before serving.
Notes
Cabbage shrinks down while baking, so don’t worry if the dish looks full.
You can substitute brown rice, but extend the bake time and add extra broth.
Try topping with shredded cheese during the last 10 minutes for a cheesy twist.
