Description
A comforting and zesty one-pot Broccoli Orzo with White Beans, Lemon and Parmesan recipe made with wholesome ingredients like orzo pasta, white beans, and fresh broccoli. This vegetarian meal is creamy, bright with lemon, and perfect for easy weeknight dinners or lunch prep.
Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
1 cup orzo pasta
3 cups vegetable broth
2 cups broccoli florets, chopped
1 can white beans (15 oz), drained and rinsed
1 lemon, zested and juiced
½ cup grated Parmesan cheese
Salt, to taste
Black pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat and sauté the minced garlic for 30 seconds until fragrant.
2. Stir in the orzo and toast for 1 minute, then add the vegetable broth and bring to a simmer. Cook uncovered for 5–6 minutes.
3. Add the chopped broccoli, stir, cover, and cook for another 5 minutes or until the broccoli is tender.
4. Stir in the white beans and cook for 2–3 minutes until warmed through.
5. Turn off the heat and stir in lemon zest, lemon juice, and grated Parmesan. Season with salt and pepper.
6. Serve warm or at room temperature, topped with extra Parmesan if desired.
Notes
Use whole wheat orzo for extra fiber.
Add extra broth if the dish thickens too much.
Chill leftovers and enjoy it as a pasta salad the next day.
