Description

This Bourbon Chicken Skewers recipe features juicy chicken thighs marinated in a sweet, tangy bourbon sauce and grilled to perfection. It’s an easy dinner idea packed with flavor, perfect for summer grilling or meal prep. Ideal for BBQs, quick meals, or serving with rice, noodles, or wraps.


Ingredients

500g chicken thighs

1/4 cup bourbon

1/3 cup soy sauce

1/4 cup brown sugar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons apple cider vinegar

2 tablespoons ketchup

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon olive oil

8 skewers


Instructions

1. In a medium bowl, whisk together bourbon, soy sauce, brown sugar, garlic, ginger, vinegar, ketchup, and olive oil. Reserve one-third of the marinade.

2. Cut chicken thighs into bite-sized chunks and marinate in the remaining mixture for at least 1 hour, preferably overnight.

3. Thread marinated chicken onto skewers, leaving space between each piece.

4. Preheat grill to medium-high. Grill skewers for 10-12 minutes, turning and basting with reserved marinade.

5. In a small saucepan, heat reserved marinade with cornstarch and water. Simmer until thickened.

6. Brush thickened glaze over cooked skewers and serve hot.

Notes

Make sure to soak wooden skewers in water if using.

Marinate overnight for the best flavor absorption.

You can substitute bourbon with apple juice for an alcohol-free version.
