Ingredients

1 cup cottage cheese

2 large eggs

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup oat flour (or blended oats)

1/2 cup fresh or frozen blueberries

1/4 cup milk of choice

1 tablespoon melted butter or coconut oil


Instructions

  1. Preheat oven to 350°F (175°C) and grease a small baking dish.
  2. In a bowl, whisk together cottage cheese, eggs, honey, vanilla extract, and milk until smooth.
  3. Add oat flour, cinnamon, baking powder, and salt. Mix well to combine.
