Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
3 large eggs
2 teaspoons vanilla extract
3/4 cup Biscoff spread
3/4 cup whole milk
1/4 cup heavy cream
2 cups powdered sugar
Instructions
1. Preheat oven to 350°F and prepare two 8-inch cake pans with parchment paper.
2. Whisk flour, baking powder, and salt in a medium bowl.
3. In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy.
4. Add eggs one at a time, then mix in vanilla and Biscoff spread.
5. Alternate adding dry ingredients and milk to the wet mixture, mixing until just combined.
6. Divide batter between pans and bake for 25–30 minutes. Cool completely.
7. For the frosting, beat butter and Biscoff until creamy. Add powdered sugar and cream until fluffy.
8. Assemble by spreading frosting between layers and all over the cake. Top with crushed Biscoff cookies.
