Ingredients

4 salmon fillets

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic, minced

1⁄4 cup sun-dried tomatoes, chopped

1⁄2 cup chicken broth

3⁄4 cup heavy cream

1⁄2 cup grated parmesan cheese

1 teaspoon Italian seasoning

1⁄4 teaspoon crushed red pepper flakes

Salt and black pepper, to taste


Instructions

1. Season salmon fillets with salt and black pepper.

2. In a large skillet, heat olive oil and butter over medium heat.

3. Sear salmon on both sides until golden brown and cooked through, then remove from skillet.

4. Add more olive oil if needed, then sauté garlic and sun-dried tomatoes until fragrant.

5. Pour in chicken broth and simmer for 2-3 minutes.

6. Stir in heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until sauce thickens slightly.

7. Return salmon to skillet, spooning sauce over the top. Simmer gently for 2-3 minutes until warmed through.

8. Serve hot with desired side dishes and garnish with herbs if desired.

Notes

Make sure not to overcook the salmon for a moist texture.

Use freshly grated parmesan for a smoother sauce.

If sauce gets too thick, add a splash of broth or cream when reheating.
