Ingredients
3 ripe bananas
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup milk or sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts or chocolate chips, optional
Instructions
1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a large bowl, mash the ripe bananas until mostly smooth.
3. Stir in the melted butter, sugar, eggs, vanilla extract, and milk or sour cream until well combined.
4. Add the flour, baking soda, and salt, then fold gently until no dry streaks remain.
5. Fold in the walnuts or chocolate chips if using.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out mostly clean.
8. Let the banana bread cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas with plenty of brown spots for the sweetest flavor and softest texture.
Do not overmix the batter once the flour is added or the loaf can turn out dense.
If the top starts browning too quickly, loosely cover it with foil during the final part of baking.
