Ingredients
2 chicken breasts
1 cup long-grain white rice
6 cups chicken broth
8 ounces cream cheese
1 cup shredded cheddar cheese
1 packet ranch seasoning mix
6 slices cooked bacon
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 small onion, chopped
2 tablespoons butter
to taste salt
to taste black pepper
Instructions
1. Melt butter in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
2. Add chicken breasts and chicken broth to the pot. Stir in the ranch seasoning. Bring to a simmer and cook for 20 minutes or until the chicken is fully cooked.
3. Remove chicken from the pot and shred it using two forks. Return shredded chicken to the pot.
4. Stir in uncooked rice. Let the soup simmer for 15 minutes or until the rice is tender, stirring occasionally.
5. Lower the heat. Add cream cheese and stir until melted and smooth.
6. Stir in cheddar cheese until fully incorporated.
7. Add cooked bacon, then taste and season with salt and pepper as needed.
8. Serve hot, topped with extra cheese or bacon if desired.
Notes
Use jasmine or basmati rice for best texture.
Add a splash of milk or broth when reheating leftovers.
