Ingredients

4 boneless skinless chicken breasts

1/2 cup all purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

4 tablespoons unsalted butter

3 cloves garlic minced

1 cup chicken broth

1/3 cup fresh lemon juice

2 tablespoons capers drained

2 tablespoons fresh parsley chopped


Instructions

1. Slice chicken breasts in half horizontally to create thin cutlets and gently pound to even thickness. Season with salt and pepper then dredge lightly in flour.

2. Heat olive oil and 2 tablespoons butter in a large skillet over medium heat. Cook chicken until golden brown and cooked through about 4 minutes per side. Transfer to a plate.

3. In the same skillet sauté garlic for about 30 seconds until fragrant. Pour in chicken broth and lemon juice scraping up browned bits from the pan.

4. Simmer the sauce for 3 to 4 minutes until slightly reduced then stir in remaining butter and capers.

5. Return chicken to the skillet spoon sauce over the top and simmer for 2 minutes until heated through.

6. Sprinkle with fresh parsley and serve with extra sauce.
