Ingredients

1.5 lbs chicken thighs

1 tbsp olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp paprika

0.5 tsp turmeric

1 tsp salt

0.5 tsp black pepper

1 can full-fat coconut milk (13.5 oz)

2 tbsp lime juice

0.25 cup fresh cilantro, chopped


Instructions

1. Season chicken thighs with salt, pepper, paprika, and turmeric.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden. Remove and set aside.

3. In the same skillet, add onion, garlic, and ginger. Sauté until softened and fragrant.

4. Pour in the coconut milk and bring to a simmer.
