Ingredients
1 tablespoon olive oil
1 pound ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 can (10 oz) red enchilada sauce
1 package (20 oz) refrigerated cheese tortellini
1 cup shredded cheddar cheese
4 ounces cream cheese
Salt, to taste
Black pepper, to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Season with salt and pepper.
2. Add diced onion and minced garlic. Cook until softened and fragrant, about 3–4 minutes.
3. Pour in enchilada sauce and bring to a gentle simmer.
4. Stir in cheese tortellini and cover. Simmer for 6–7 minutes until tender.
5. Add cream cheese and stir until fully melted and incorporated.
6. Sprinkle shredded cheddar on top. Cover until melted.
