Description
These Beef and Cheese Chimichangas are crispy, golden Tex-Mex favorites made with seasoned ground beef, melty cheddar, and soft flour tortillas. A family-friendly recipe that’s easy to fry or bake, freezer-friendly, and perfect for dinner or meal prep.
Ingredients
1 pound ground beef
1 packet taco seasoning
1 small onion, chopped
2 cloves garlic, minced
1 cup salsa
1 cup refried beans
1 ½ cups shredded cheddar cheese
6 large flour tortillas
Oil for frying or cooking spray for baking
Instructions
1. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
2. Add chopped onion and minced garlic. Cook until softened and fragrant.
3. Stir in taco seasoning and a splash of water. Simmer briefly.
4. Add salsa and refried beans. Mix well and heat through.
5. Spoon filling into each tortilla, top with cheese, fold sides, and roll up tightly.
6. Heat oil in a skillet or preheat oven to 400°F.
7. For frying: Cook seam-side down in hot oil until golden on all sides.
8. For baking: Place on baking sheet, spray with cooking spray, and bake for 15–20 minutes.
9. Serve hot with toppings like sour cream, salsa, or guacamole.
Notes
Let chimichangas rest on paper towels to absorb extra oil.
Baking offers a lighter alternative to frying.
You can freeze them assembled (but uncooked) for quick meals later.
