Ingredients
12 large egg whites
1 ½ cups granulated sugar
1 cup cake flour
1 ½ teaspoons cream of tartar
¼ teaspoon salt
1 teaspoon strawberry or raspberry extract
1 to 2 drops pink gel food coloring
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F. Do not grease the tube pan.
2. Sift together cake flour, ¾ cup of the sugar, and salt three times.
3. In a large bowl, beat egg whites with cream of tartar until soft peaks form.
4. Gradually add the remaining ¾ cup of sugar while beating to stiff peaks.
5. Beat in vanilla and strawberry or raspberry extract, then pink food coloring.
6. Gently fold in dry mixture in thirds, keeping the batter light and fluffy.
7. Spoon batter into the tube pan and smooth the top.
8. Bake 35–40 minutes until the top springs back lightly.
9. Invert the cake pan to cool upside down completely.
10. Once cooled, run a knife around edges to release.
