Ingredients

1.5 pounds chicken thighs, cut into bite-sized pieces

1 cup cornstarch

1 teaspoon salt

1/2 teaspoon black pepper

2 eggs, beaten

Oil for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha

1 tablespoon honey

Instructions

1. Cut chicken into chunks and season with salt and pepper.

2. Beat eggs in a bowl and prepare a separate bowl with cornstarch.

3. Dip chicken into egg then dredge in cornstarch until coated.

4. Heat oil and fry chicken in batches for 3–5 minutes until golden.

5. Drain on paper towels.

6. In a separate bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey.

7. Toss the fried chicken with the sauce or drizzle it over the top.
