Ingredients

3 ripe bananas

1 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted

¾ cup brown sugar

2 large eggs

1 teaspoon vanilla extract

¾ cup chopped walnuts or pecans


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. In a large bowl, mash bananas until mostly smooth.

3. Add melted butter, brown sugar, eggs, and vanilla. Mix well.

4. In a separate bowl, combine flour, baking soda, salt, and cinnamon.

5. Gradually add the dry ingredients to the banana mixture and stir until just combined.

6. Fold in chopped nuts, reserving a small handful for topping.

7. Pour the batter into the prepared loaf pan.

8. Bake for 55 to 65 minutes or until a toothpick inserted comes out clean.

9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas with brown spots for the best flavor.

You can toast the nuts beforehand to enhance their flavor.
