Ingredients
1 cup unsalted butter
1 cup powdered sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1 tablespoon cornstarch
1 4 teaspoon salt
6 ounces cream cheese
3 4 cup powdered sugar
1 teaspoon cinnamon
1 cup chopped walnuts and or pistachios
Instructions
1. In a mixing bowl, beat the unsalted butter and powdered sugar until light and fluffy. Add vanilla extract and mix again.
2. Gradually add flour, cornstarch, and salt. Mix until a soft dough forms.
3. Chill dough for 30 minutes, then roll into balls and flatten slightly on a parchment-lined baking sheet.
4. Bake at 350°F for 10–12 minutes until bottoms are lightly golden. Let cookies cool completely.
5. Prepare the filling by beating cream cheese with powdered sugar and cinnamon until smooth. Fold in the chopped nuts.
6. Spread filling on the flat side of a cookie and sandwich it with another. Repeat with all cookies.
7. Dust with powdered sugar for serving.
Notes
These cookies hold best when chilled for an hour before serving.
Toasting the nuts before folding into the filling enhances flavor.
You can mix walnuts and pistachios for a more traditional baklava taste.
