Description

These Baked Onions with Asiago Cheese are a rich, savory side dish made with caramelized yellow onions and nutty Asiago cheese. Perfect for holidays or weeknight dinners, this cheesy baked onion recipe is comforting, low-carb, and naturally gluten-free.


Ingredients

3 large yellow onions

1 ½ cups grated Asiago cheese

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper

1 teaspoon fresh thyme (optional)


Instructions

1. Preheat your oven to 400°F (200°C).

2. Slice the onions into thick horizontal rings, about ½ inch thick, and arrange them in a greased baking dish.

3. Drizzle the onions with olive oil and sprinkle with salt, black pepper, and thyme if using.

4. Bake for 25 minutes, until the onions are soft and starting to brown around the edges.

5. Remove the dish from the oven and top each onion slice with a generous amount of grated Asiago cheese.

6. Return to the oven for another 10 to 15 minutes until the cheese is melted, bubbly, and golden.

7. Let them cool slightly before serving warm.

Notes

Use yellow onions for best flavor and texture.

Asiago cheese can be substituted with Parmesan or Gruyère if desired.

For extra browning, broil for 2-3 minutes at the end.
