Ingredients
1 ½ cups all-purpose flour
½ cup granulated sugar (plus extra for topping)
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup milk
2 large eggs
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
1 cup heavy cream
4 large egg yolks
⅓ cup brown sugar
Instructions
1. Preheat your oven to 350°F (175°C). Grease a doughnut pan. In a bowl, whisk flour, baking powder, salt, and sugar.
2. In another bowl, whisk milk, eggs, melted butter, and vanilla. Combine wet and dry ingredients just until smooth.
3. Spoon batter into the pan and bake 12–15 minutes until golden and springy. Cool completely.
4. To make the custard, heat cream in a saucepan until steaming. In a bowl, whisk yolks, brown sugar, and pinch of salt. Slowly whisk in hot cream. Return to saucepan and cook over low heat, stirring, until thickened. Stir in vanilla and cool.
5. Use a piping bag to fill each cooled doughnut with custard through the side or bottom.
6. Sprinkle granulated sugar over tops and brûlée with a kitchen torch until caramelized. Serve immediately or after topping sets.
Notes
Make sure to cool custard completely before filling.
Use a light hand when torching to avoid burning the sugar.
Doughnuts are best enjoyed fresh but can be stored unfilled and assembled later.
