Ingredients

1/2 cup butter

1 cup sugar

1/3 cup cocoa powder

2 large eggs

1/4 cup Baileys Irish Cream

1/2 cup all-purpose flour

1/4 teaspoon salt

1/2 cup chocolate chips


Instructions

1. Melt the butter in a saucepan over low heat. Once melted, whisk in the cocoa powder until smooth and glossy. Let it cool slightly.

2. In a large mixing bowl, beat the sugar and eggs until pale and fluffy. Add the Baileys and mix until combined.

3. Stir the cooled cocoa-butter mixture into the eggs and sugar.

4. Gently fold in the flour and salt until just combined. Avoid overmixing.

5. Fold in the chocolate chips evenly through the batter.

6. Pour the batter into a lined 9×9 baking dish.

7. Bake at 350°F (175°C) for 25–30 minutes or until a toothpick comes out with a few moist crumbs.

8. Cool completely before slicing and serving.

Notes

Use good quality cocoa for richer flavor.
