Ingredients
2 pounds potatoes
1 small onion
2 large eggs
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/3 cup vegetable oil (for frying)
Instructions
1. Peel and grate the potatoes and onion using a coarse grater.
2. Place the grated mixture in a clean towel or cheesecloth and squeeze out as much liquid as possible.
3. Transfer to a mixing bowl and add eggs, flour, salt, and pepper.
4. Stir until fully combined and the mixture holds together.
5. Heat oil in a skillet over medium-high heat until shimmering.
6. Spoon about 1/4 cup of batter into the pan and flatten with the back of a spoon.
7. Fry for 3–4 minutes on each side or until golden brown and crispy.
8. Transfer pancakes to a paper towel-lined plate to drain excess oil.
9. Serve immediately with applesauce or sour cream.
Notes
Make sure to squeeze out all excess liquid from the potatoes.
Keep pancakes warm in a low oven if serving a crowd.
You can double the batch and freeze extras for quick snacks.
