Ingredients

2 cups pulled pork

2 cups shredded chicken

1 large onion, chopped

28 oz crushed tomatoes

2 tbsp tomato paste

4 cups chicken broth

1 1/2 cups lima beans

1 1/2 cups corn kernels

1/2 cup barbecue sauce

2 tbsp brown sugar

1 tbsp apple cider vinegar

Salt and pepper to taste


Instructions

1. In a large pot or Dutch oven, heat oil over medium heat and sauté chopped onion and garlic until soft.

2. Stir in crushed tomatoes, tomato paste, and chicken broth. Bring to a gentle simmer.

3. Add pulled pork, shredded chicken, lima beans, and corn. Stir in barbecue sauce, brown sugar, and apple cider vinegar.

4. Reduce heat and simmer uncovered for 30 to 45 minutes until thickened and flavors meld.

5. Season with salt and pepper. Adjust sweetness or acidity if needed.

Notes

This stew gets even better the next day as flavors deepen.

Use store-bought rotisserie chicken and leftover pulled pork for easy prep.
