Ingredients
1 cup warm water
2 teaspoons sugar
2 1/2 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon salt
1/4 cup plain yogurt
2 tablespoons olive oil
4 tablespoons unsalted butter
4 garlic cloves, minced
2 tablespoons fresh parsley or cilantro, chopped
Instructions
1. In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let sit for 10 minutes until frothy.
2. In a large mixing bowl, add flour and salt. Pour in the yeast mixture, yogurt, and olive oil. Mix until a sticky dough forms.
3. Transfer the dough to a floured surface and knead for 8 to 10 minutes until smooth.
4. Place the dough in an oiled bowl, cover, and let rise in a warm area for 1 to 2 hours until doubled in size.
5. Punch down the dough, divide into 6 to 8 pieces, and roll each into an oval about 1/4 inch thick.
6. Heat a dry skillet over medium-high heat. Cook one naan at a time for 1-2 minutes per side until golden and bubbly.
7. Melt butter in a small pan and sauté minced garlic until fragrant. Brush over warm naan and sprinkle with herbs.
8. Serve immediately or store as desired.
Notes
Let dough rise until doubled for the softest naan.
Use a very hot skillet for the best bubbles and charred spots.
Fresh garlic butter is key—brush it on right after cooking.
