Description

These Apple Cider Donut Muffins are the perfect cozy fall treat. Made with reduced apple cider, Greek yogurt, warm spices, and coated in cinnamon sugar, they’re soft, fluffy, and taste like your favorite fairground donut. Great for breakfast, brunch, or dessert. Ingredients

1 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup apple cider, reduced to 1/2 cup

1/2 cup unsalted butter, melted

2/3 cup brown sugar

2 large eggs

1/2 cup Greek yogurt

1 teaspoon vanilla extract

1/4 cup unsalted butter, melted (for topping)

1/2 cup granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)


Instructions

1. Pour apple cider into a saucepan and simmer until reduced to 1/2 cup. Let cool.

2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.

3. In a separate bowl, mix cooled melted butter, brown sugar, eggs, Greek yogurt, reduced cider, and vanilla.

4. Combine wet and dry ingredients just until incorporated.

5. Preheat oven to 350°F and line a muffin tin. Fill each cup 3/4 full with batter.

6. Bake for 17 to 20 minutes, until a toothpick inserted comes out clean.

7. Let muffins cool for 5 minutes in the pan, then transfer to a rack.

8. Melt additional butter. Mix cinnamon and sugar in another bowl.

9. Dip each warm muffin top into butter, then coat in cinnamon sugar.

10. Serve warm or store in an airtight container for later.

Notes

Let the reduced apple cider cool completely before mixing into batter.

Don’t overmix the batter to keep muffins soft and tender.

Only coat the muffins in cinnamon sugar while they’re still warm so it sticks well.
