Ingredients
2 packs ramen noodles 3 tablespoons peanut butter 2 tablespoons soy sauce 3 cloves garlic minced 1 tablespoon fresh ginger grated 1 to 2 tablespoons chili paste 1 can (13.5 oz) coconut milk 1 tablespoon lime juice 2 cups vegetables (bok choy, carrots, scallions) 1 cup optional protein (tofu, chicken, or shrimp)
Instructions
1. Sauté the Aromatics: Heat a drizzle of oil in a pot over medium heat. Add minced garlic and ginger, cooking until fragrant. Build the Broth: Stir in peanut butter, soy sauce, and chili paste. Whisk in coconut milk and 2 cups water or broth. Simmer until smooth. Cook the Noodles: Add ramen noodles directly into the simmering broth. Cook according to package instructions. Add Vegetables and Finish: Toss in vegetables and optional protein during the last 2 minutes. Stir in lime juice and adjust seasoning. Serve: Ladle into bowls, garnish with scallions, cilantro, or crushed peanuts, and serve hot.
Notes
Use fresh or frozen ramen noodles if possible for the best texture. Adjust chili paste based on your preferred heat level. Add more broth when reheating as noodles soak up liquid.
