Ingredients
2 tablespoons butter
1 small onion, diced
2 cloves garlic, minced
4 cups diced potatoes
4 cups chicken broth
2 cups corn (fresh, frozen, or canned)
2 cups diced ham
2 cups egg noodles
1 cup heavy cream
Salt and pepper, to taste
Instructions
1. Melt the butter in a large soup pot over medium heat. Add the diced onion and garlic, sauté until translucent and fragrant.
2. Stir in the diced potatoes and cook for a few minutes to coat them in the butter. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
3. Add the corn and diced ham. Stir and let it simmer for a few more minutes to blend flavors.
4. Add the egg noodles directly into the soup. Cook until noodles are tender, stirring occasionally.
5. Lower the heat and pour in the heavy cream. Stir well, season with salt and pepper to taste, and warm through before serving.
Notes
Use leftover ham for extra flavor and convenience.
If freezing, omit the noodles and add fresh when reheating.
You can swap heavy cream for half-and-half for a lighter version.
