Description
Alice Springs Chicken is a delicious grilled chicken breast recipe smothered in honey mustard sauce, crispy bacon, and melted cheddar cheese. This easy chicken dinner is perfect for weeknights or special occasions and pairs well with roasted veggies or mashed potatoes.
Ingredients
4 boneless skinless chicken breasts
8 slices bacon
1 cup shredded cheddar cheese
1/4 cup honey
1/4 cup Dijon mustard
1/4 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Whisk together honey, Dijon mustard, mayonnaise, and lemon juice until smooth. Reserve half for serving and use the rest to marinate the chicken.
2. Place chicken in a ziplock bag or shallow dish and cover with half the sauce. Refrigerate for 30 minutes to 2 hours.
3. In a skillet, cook bacon until crispy. Set aside on paper towels.
4. Remove chicken from marinade. Heat olive oil in a skillet and cook chicken breasts 6–7 minutes per side until golden and cooked through.
5. Preheat oven to 400°F. Place chicken in a baking dish, top with reserved sauce, crumbled bacon, and shredded cheddar.
6. Bake for 10 minutes or until cheese is melted and bubbly.
7. Serve hot, optionally garnished with parsley.
Notes
This recipe can be prepped ahead by marinating the chicken overnight.
Use a meat thermometer to ensure chicken reaches 165°F internally.
Try substituting Monterey Jack cheese for a creamier finish.
