Ingredients

2 boneless skinless chicken breasts or thighs

2 eggs

1 cup gluten-free breadcrumbs

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

cooking spray or olive oil spray

Instructions

1. Trim the chicken and slice thicker pieces in half horizontally.

2. Beat the eggs in a shallow bowl.

3. In another bowl, combine the breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.

4. Dip each chicken piece into the eggs, then into the breadcrumb mix, pressing to adhere.

5. Spray the air fryer basket with oil.

6. Arrange chicken pieces in a single layer in the basket and lightly spray the tops.

7. Cook at 380°F for 10 to 12 minutes, flipping halfway, until golden and the internal temperature reaches 165°F.

8. Let rest for a few minutes before serving.

Notes

Use chicken thighs for extra juiciness.

Don’t overcrowd the air fryer basket.
